On Sunday night we baked our own bread.

Our own homemade bread

It was so delicious when fresh out of the oven, with some butter and raspberry jam. It tasted like a big piping hot scone.

Back on the Gold Coast

Tuesday we flew back into the Gold Coast. It’s been so nice to see some family, feel the sun and eat fantastic food! Oh how we’ve missed things like lamb, cheese, decent bread, our kitchen..

Here’s what we’ve been doing this week:

Oven Mitts

Baking and roasting. Mostly lamb and potatoes, but also one cake and one loaf of bread.

we cooked up some beautiful country style roast vegetable w/ beef spare ribs

the other night. & I’ve been meaning to blog about it

but we have been busy planning our trip back to China.

which deserves it’s own post (which I’ll do in the next few days)

so back to the cooking!

Country Style Roast Vegetables

we went to woolworths & purchased a bunch of tasty veggies to bake:

beetroot

sweed

white & golden sweet potato

pumpkin

red onion

purple garlic

rosemarry

we also went to our local butcher for the beef spare ribs! so yum.

the key with a country style roast is to leave the skin on everything

and to just chop it up roughly

you’d be amazed at how yummy red onion is when it’s baked w/ the skin on

just add all the vegetables to a nice cast iron baking pan

add oil & salt.

maybe some dried herbs.

& bake @ 150c for 1.5 hours

I suggest using your hands to mix it all in! Joel took the opportunity to take a few photos, which all turned out to be fantastic.

Baked goodness.
